New Restaurants Coming to Castle Rock 2026 and the Rest of the County: Dunkin' Is Open, Peak Pizza Says Days, GQue Says November, and a Parker King Soopers Lands Dec. 2
Edition nine: Castle Rock's only Dunkin' opened on Aloha Street, the Outlets' pizzeria is stocked and training, GQue BBQ has a month, King Soopers has a flyer with a date, Vehicle Vault has a last day, the county signed its Lockheed deal with numbers attached, and RidgeView gets its final vote on Election Day.
Two weeks since edition eight, and the headline is a doughnut shop. Castle Rock's Dunkin' finally opened after a month of "coming soon," Peak Pizza is a few days out by its own account, and the Parker barbecue everyone keeps asking about now says November. Below that: a grocery store with a date on a flyer, a car museum with a last day, the dollar figures on the county's Lockheed Martin deal, and a Castle Rock annexation whose final vote lands on Election Day. Tip line on the About page.
Opened
Dunkin', 1185 Aloha St. in Founders Marketplace, is open, and it is the only Dunkin' in Castle Rock. DougCo Social reports a soft opening on Thursday, Oct. 22 and a grand opening Saturday, Oct. 24 with a 9 a.m. ribbon cutting and a $3,000 donation to Children's Hospital Colorado. Hours are 4 a.m. to 8 p.m. daily. The franchisee is Quality Brand Group, which counts this as its 18th Colorado Dunkin'; the store is just under 1,600 square feet with a drive-through and about 15 employees. Edition eight carried it as past its early-October window with no date. It made it by three weeks.
RESTOR Medical Spa opened Thursday, Oct. 22 at 10012 Commons St., Suite 108, in Lincoln Commons in Lone Tree, with a 4:30 p.m. ribbon cutting and an open house to 8 p.m., per DougCo Social. It is the chain's newest Denver-metro location.
BODYBAR Pilates has a second Douglas County studio open, at 9231 E. Lincoln Ave., Suites 600 to 700, in Lone Tree near the Lincoln Station RTD stop, per DougCo Social on Oct. 21. Group reformer classes in seven formats. The Highlands Ranch studio opened earlier this month.
Nova Glow Studio in The Juniper on Mainstreet, 19865 Mainstreet, Suite 110, Parker, which we have carried since August, began classes Monday, Oct. 12 on a limited soft-opening schedule, with the full calendar filling in from Oct. 26, per its DougCo Social listing. Reformer Pilates plus an infrared and red-light mat room.
Two ribbon cuttings from the chamber calendars: Sparq Physical Therapy cut the ribbon on its new location at 755 S. Perry St. in Castle Rock on Oct. 15, and Red Light Method, 10450 S. Progress Way in Parker, held its grand-opening ribbon cutting with the Parker Chamber on Oct. 22.
Dated
Peak Pizza at the Outlets at Castle Rock, Suite 660, is not open as of this writing, but it is close. DougCo Social reports an Oct. 23 Instagram post from the pizzeria saying the food is stocked, the team is training and it plans to open early the week of Oct. 26, with no exact date. The overhead sign is up, and on an Oct. 21 visit the arcade already had Pac-Man and a Buck Hunter-style game installed. Tentative hours follow the mall's: Monday through Saturday 10 a.m. to 8 p.m., Sunday 11 to 6. Owners Allen and Katie Hoover told DougCo Social on Oct. 6 they were aiming for mid-to-late October. They are a few days behind that and nobody should hold it against them.
The Gathering Yard, the food truck and vendor lot at 11023 S. Pikes Peak Dr. behind the main building near Mainstreet Parker, is still in soft opening Fridays through Sundays, and the Grand Opening and Fall Festival is still set for Friday, Oct. 30, 5 to 8 p.m., per DougCo Social's Oct. 24 update. Vendors set up free through Oct. 21; from here it is $50 a day or $100 for the weekend. Owner Laura Mohr. No posted daily hours, so follow the signs.
GQue BBQ, 18424 Cottonwood Dr. in Parker's Crown Point Center, the former Freddy's, now says November 2026, per DougCo Social's Oct. 24 update: fresh paint finished, new signs going up, hiring events held Oct. 14, 17 and 19 at the Parker library. No day yet. Edition eight had it as "end of 2026." That is progress.
King Soopers, 6755 Prospector Lane in Parker near the Pinery, has a date on paper. DougCo Social reports a hiring flyer that reads "Grand Opening December 2nd 2026," seven job listings live on Kroger's careers site, and a hiring event held at the Cottonwood Drive King Soopers. Kroger has not issued a release, so treat the date as the flyer's, not the company's.
Vehicle Vault, 18301 Lincoln Meadows Pkwy. in Parker, has published its last day: admission is free through its final public day, Sunday, Dec. 27, 2026, per DougCo Social's Oct. 24 update, and the museum warns that some vehicles will leave before then. The 4.09-acre property was listed in September 2025 at $9.7 million; whether it has sold is not reported. Edition eight and the fall closings piece had the museum winding down with no date. Now there is one.
Thirsty Lion Gastropub, 8335 Park Meadows Center Dr. in Lone Tree: the chain's own locations page still says only "opening late 2026." Edition eight reported December from DougCo Social; the company's page does not say so.
Announced, no date
Graze Craze, the charcuterie-board and grazing-table franchise, is coming to 422 Elbert St. in downtown Castle Rock, per DougCo Social on Oct. 24; the franchisee also owns a Denver event-planning company, the chain's locations page lists Castle Rock as "coming soon," and whether it is a retail storefront or a pickup-only commissary is not yet known.
Pilates Addiction, a reformer studio built around a gold-plated reformer, is coming to 333 Perry St. in downtown Castle Rock, per DougCo Social on Oct. 21. No opening date; founding memberships are on sale.
Tailgate Tavern and Grill, 19552 Mainstreet in Parker, has been sold to Chris Potter, who also owns Sports Lounge Off Broadway, Crimson and Gold Tavern and the Fainting Goat Pub, per DougCo Social on Oct. 24, citing the bar's own Instagram. No name or concept change was announced, and the bar stays open.
Government: Lockheed's numbers, and RidgeView's last vote
Edition eight promised the dollar figure on the county's Lockheed Martin deal when it surfaced. It surfaced. The Board of County Commissioners approved the incentive agreements at its Oct. 20 business meeting: a 100 percent rebate of the county's share of business personal property tax on the project for 35 years, which Colorado Politics reports the county estimates at $585,000 to $620,000 in total, plus a separate performance-based incentive of up to $2.7 million, about $6,000 per new job that Lockheed keeps for at least 24 months. Lockheed's own investment is about $29 million, $21 million in real property and $8 million in equipment, for up to 450 jobs over four years at its Highlands Ranch campus, per both Colorado Politics and DougCo Social. Lockheed keeps paying standard real property tax. Neither account reports a vote count, and the county says the rebate will appear in its proposed 2027 budget, which we have not read.

RidgeView Town Center is not done. Castle Rock Town Council approved the annexation, the planned-development zoning and the development agreement for the 10.54-acre site west of North Ridge Road and south of Fifth Street on first reading Oct. 20, each 7-0, per DougCo Social and the item titles on the town's Legistar page. Second and final reading is Tuesday, Nov. 3, Election Day, at 6 p.m. The development agreement would vest the site plan through the end of 2036. The Planning Commission had recommended approval 5-0 on Oct. 8.
The rest of Oct. 20 we cannot yet report. The 2027 budget ($411.8 million), the water, wastewater and stormwater rate ordinance and the fireworks and open-burning amendments were all up for second and final reading that night, and as of Oct. 27 the town's Legistar minutes are still marked draft with every result "not available." First readings on Oct. 6 went 7-0 on the budget and rates and 6-1 on fireworks. Also on that agenda: a construction contract with 53 Corporation for the Dawson Trails Park-n-Ride, two Industrial Tributary Trail agreements, and an ordinance ending the sales-tax exemption on cigarettes. We will report the tallies when the minutes post.
CORE Electric's Monte Ridge substation, 22 acres near North Ridge Road and East Plum Creek Parkway in Castle Rock with 100 megawatts of battery storage to follow, is to begin work in 2026 and enter service in 2027, per DougCo Social on Oct. 24. No groundbreaking date.
The still-waiting list, kept honest
Nothing new in the window on any of these, from the sources we read:
- Cask and Trotter (The Juniper, 19865 Mainstreet, Unit 150, Parker): end of 2026, sign up since Oct. 10
- SuBourbon on Main (19590 Mainstreet, Suite 101, Parker): around the new year
- The Summit Society (Parker Hotel, Mainstreet): Dec. 1
- Thai Wow (794 S. Perry St., Castle Rock): late 2026
- Stumpy's Pizza: no new address
- The Hideaway (600 Jerry St., Castle Rock): closed since the May fires, no rebuild date
- Los Dos Potrillos (6372 Promenade Pkwy., Castle Rock): no 2026 update
One correction to edition eight: Joy Batch Cookies and Coffee is in Highlands Ranch, at 9315 Dorchester St., Unit 109, and the Oct. 20 ribbon cutting we listed was the Castle Pines Chamber's event at that Highlands Ranch storefront. Whether it went ahead as scheduled we could not confirm.
