Scileppi's at The Old Stone Church

Scileppi's at The Old Stone Church occupies the 1888 Castle Rock Congregational Church on Wilcox Street, restored and converted to a restaurant around 2005. The Scileppi family runs it. The building is the obvious draw, vaulted ceilings, original pews converted to booths, stained glass, exposed stone, but the food is what makes the reservation repeat.
The menu is traditional Italian American done with care. Pasta is made in-house, the sauces get the time they need, proteins are sourced reasonably. The veal marsala and the chicken saltimbocca are consistent strong orders. The lasagna and the baked ziti are what you bring someone who wants Italian and doesn't want to be challenged. The wine list leans Italian and Colorado with enough by-the-glass options to match any course.
The room is the anniversary feature. Tables have real space between them, the acoustics absorb sound, the lighting is soft without being dim. You can have an actual conversation at a four-top, which is rare in DougCo. Service tempo is European: three hours from arrival to dessert if you want it, not rushed, not pushy.
Reservations fill two weeks out for Saturday evenings, four days for Friday. Weekday walk-ins work before 7 p.m.

Saturday prime time (6 to 8:30 p.m.) is booked two weeks out. Tuesday through Thursday evenings have reasonable availability. Sunday dinner is available but the kitchen slows. Lunch is Thursday through Sunday only.
Ask for Table 12 or a booth in the sanctuary nave when you reserve, the stained glass light at sunset is worth the specific request. Mention an occasion and you'll get a small acknowledgment from the kitchen, not a production.
Not a casual weeknight place with kids under 10. The pace is slow, the room is quiet, and restless kids will feel it. Parker Garage or the patio at Great Divide are better mid-tier family dinners. Also: no shorts, no athletic wear, the dress code is enforced politely.
