New in Douglas County: Lone Tree's Justice Center Opens Today, Shake Shack and Salady Actually Opened, and Stumpy's Served Its Last Slice on Wilcox

We owe you an apology before we owe you any news: this tracker last ran on July 29, an August edition was drafted and never published, and six weeks of openings and closings piled up while we were not looking. Opens today: Lone Tree's $30 million Justice Center

The City of Lone Tree's page says the police department and municipal court move into the new Justice Center at 12707 High Note Ave. effective September 14; officials cut the ribbon Tuesday, September 8. The building, at RidgeGate Parkway and High Note Avenue on donated RidgeGate land, runs about 37,000 square feet and roughly $30 million per Hoodline's writeup, and it houses the court, the police, a gym, an emergency operations room and training space. Until now the police worked out of the municipal building on Kimmer Drive and court was held at a civic center inside a residential neighborhood, a fair measure of how far east of I-25 the city has moved.

The August draft, graded

Our never-published August 11 edition promised Parker a busy month. It got one.

Shake Shack opened Wednesday, August 12 at 9185 Crown Crest Blvd, the old Wendy's near Parker Road and E-470, exactly as reported. Listed hours run 10 a.m. to midnight most nights and to 1 a.m. Friday and Saturday; the company's own page refused to load for us, so treat the late hours as listed, not sworn.

Salady, the Korean salad chain with more than 300 stores at home and two in the United States, opened Saturday, August 22 at 9700 S. Parker Rd, Suite 700, in Parker Gateway Marketplace. Posted hours are 10:30 a.m. to 7:30 p.m., with one listing showing a short Monday ending at 2:30 p.m.

JP Cocina and Cantina, the thing we had filed under "still just a sign" in the old Wild Goose Saloon at 11160 S. Pikes Peak Dr, opened August 19. Its own site says 10 a.m. to midnight daily with two live-music stages, one indoors and one out back; local reports say 2 a.m. Thursday through Saturday. We print both and let you call.

Goods and Grace, the maker boutique at 17002 E. Mainstreet, Unit L, is open, 10 a.m. to 6 p.m. Tuesday through Saturday and 10 to 5 Sunday. The August 14 date we printed did not hold; one directory says August 20 and the shop never posted a date.

Closed: Stumpy's, Rock Bottom, Jack in the Box

Stumpy's Pizza served its last day at 138 S. Wilcox on Wednesday, August 26, after 25-plus years, per the most detailed local account we found; Rivers Church bought the building and had extended the lease through August. The team says it intends to reopen elsewhere and that the search would "just take a few months." No address yet. Oddly, the restaurant's own website still shows Wilcox Street and a full schedule, so do not drive down there on the strength of a Google result.

Rock Bottom Restaurant and Brewery closed its Highlands Ranch location at 1505 Park Central Dr in August, leaving Loveland as the chain's last Colorado outpost, per BizWest's August 18 report.

Jack in the Box at 27 E. Wolfensberger Rd in Castle Rock went dark with no announcement, part of the chain's plan to close 150 to 200 stores nationwide. Windows papered, drive-through empty, signs still up.

New: Castello Italiano, and Dawson Trails keeps stacking

Castle Pines got a real restaurant back. Castello Italiano, from the family behind Farro in Centennial, soft-opened Monday, August 31 at 361 Village Square Ln, Suite 130, the space across from the library that was Pino's until 2024 and sat empty for about two years. Dinner only: 4 to 9 p.m. Tuesday through Saturday, 4 to 8 p.m. Sunday, per its listing as of September 3. Wild boar ragu and a $55 ribeye tell you where the menu is pitched.

In Parker, GQue BBQ made it official: a press release and an August 12 What Now Denver piece confirm ground broken on the former Freddy's at 18424 Cottonwood Dr, with a full bar, a pickup drive-through and an end-of-2026 target.

In Castle Rock, Dawson Trails has a third anchor on paper: Town Council approved a 100,054-square-foot King Soopers at Dawson Trails Boulevard and Gambel Ridge Boulevard, expected in 2027. And the Gold Crown Field House, our August lead, has a calendar: after the county's $7.5 million and the town's July 21 land transfer, the foundation is targeting an April 2027 groundbreaking and an early 2028 opening on a roughly $45 million project, with the gap reported at $2.7 million in early August. No shovel yet.

Public and free: new turf, new sculptures

Douglas County reopened fields E and F at Highland Heritage Regional Park with synthetic turf that drops crumb-rubber infill for one the county says runs about 35 degrees cooler, saves roughly 3 million gallons of water a year versus grass, and carries a 12-year warranty.

Castle Rock installed five new pieces for the 2026 Douglas County Art Encounters program, announced August 31 under the headline "Encounter art every day": Bullrush by Doyle Svenby at the Miller Activity Complex, Heart of the Valley by Diego Harris at Triangle Park, Natural Selection by Annette Coleman at Cantril School, Opuntia by Kyle Cunniff at Butterfield Crossing Park, and Stumped, also by Svenby, at Festival Park. Every piece is for sale ($4,000 to $16,000), each artist gets a $1,500 stipend, and the free Otocast app carries the artists' commentary.

Follow-up

Cask and Trotter, the Wolf Peach team's anchor at The Juniper on Mainstreet, has slipped again. The August target is gone; the latest local update, from August 22, says the kitchen hood is in but the opening now looks like the end of the year. Nova Glow Studio in the same building has moved its language from "August" to "fall 2026." Thai Wow at 794 S. Perry St still says "coming soon" on its own site with ordering off, even though listing pages print hours; trust the restaurant, not the aggregators. And Link On Demand in Castle Rock, edition four's lead, has run since July 31, but neither the town nor the county has published a ridership number we could find against the 50,000-to-60,000 first-year projection. Ask us again in October.

The still-waiting list, kept honest

• Cask and Trotter (The Juniper, Parker): now end of 2026.
• Nova Glow Studio (The Juniper, Parker): now "fall 2026," no date.
• Thai Wow (794 S. Perry St, Castle Rock): "coming soon," ordering off.
• GQue BBQ (18424 Cottonwood Dr, Parker): under construction, end of 2026.
• The Hideaway (600 Jerry St, Castle Rock): still closed after the two May fires; a suspect was charged with arson, and the owners say they will rebuild, no date attached.
• Stumpy's Pizza (Castle Rock): no new address announced. If you own a vacant kitchen, they are looking.
• Encanto Mexican Kitchen (5457 Manhart Ave, Sedalia): the August closing rumor did not pan out; ordering is live and hours are posted, 6 a.m. to 3 p.m., closed Wednesday and Sunday. One directory says new management, which we could not confirm.
• Toastique (Highlands Ranch) and Trifecta Sports Bar (810 New Memphis Ct, Castle Rock): both marked closed on the listing sites, neither confirmed by the business. When a contradiction survives six weeks, the answer is usually closed.
• Vehicle Vault (18301 Lincoln Meadows Pkwy, Parker): listed for sale earlier this year with a promise to stay open through 2026. Its ticket calendar stops at October 9 and one listing site calls the October 10 Espresso and Exhaust the last one; the museum has posted no closing notice we could find. Do not wait for us.
